2011 National Pastry Team Competition
This year’s National Championship will take place on July 8-9th, 2011, at the JW Marriott Desert Ridge, Phoenix, AZ. 4 Teams from around the country competed to gain the title. Teams had only a total of 13 hours to complete the following required elements:
- 1 sugar showpiece
- 1 chocolate showpiece
- 1 chocolate and sugar tray
- 3 different types of chocolate bonbons
- 1 entremet
- 3 different types of petits gateaux
- 1 entremet glace|
- 1 plated dessert
The 4 teams were:

Each team was judged by a panel of experts on artistry and technical merit, work ethic and hygiene, and degustation. The winning team, Team Wressel, will represent the US in the following year’s World Pastry Team Championship.
